This is my Japanese chocolate ” Miso Ganache with dark & white chocolate”.
Did you know chocolate is a fermented food? Miso is also a traditional fermented seasoning. Both have great umami flavour and bitterness & sweetness from chocolate and Miso gives saltiness and depth of flavour. this double umami taste makes unique Japanese style chocolate.
Now I really appreciate it when I get great chocolate at a nice chocolate shop. I realised that it took a lot of procedure and techniques.
